Friend Easter Card

Easter is fast approaching! I still have clothes to buy, treats to do and a menu to plan.   But today’s post is a fun printable Easter card for a friend. 
Print this cute card out and stick it in an envelope for a friend that has always been there for you.  For a far away friend just drop it in the mail.  But if your friend is close by, why not attach it to a plate of treats?

Each printer is different, so follow your printer’s instructions.  For my printer- I printed one sheet on cardstock and stuck it back into the printer in the same way and printed it again.  I ended up with two cards with a front and back.  I left a line on the printable as a cutting guideline.

Mom’s Carrot Cake (Karrot Kake)

For my mother in law’s birthday we asked her what kind of cake she wanted. I thought some kind of chocolate version would win for sure.  She’s from Switzerland and LOVES chocolate.  To my surprise, she opted for carrot cake.  Which is one of my favorites.  Woohooo!

I wish my picture did this cake justice- somehow I have to come up with a way to get my oldest’s fingers out of the cream cheese frosting.  Without fail there are fingerprints before it’s eaten. Every. single. time.  Can’t blame the guy- it’s just that good!

I got this recipe from my mom years ago to make for Easter.  I have made it every year since (unless Mom was hosting ;) ).  It takes some work- but easy if you follow the directions.  And it’s well worth the effort.  There are two optional ingredients- nuts (I use walnuts) and one small can of crushed pineapple.  The crushed pineapple makes it even moister and gives it a little added taste.  Mmmm……..so good!  Oh and this one has no raisins, but you could add them if you want.

Perfectly moist carrot cake. So good and worth the effort!
Ingredients
  • 3 C grated carrots
  • 2 C sugar
  • 2 C flour
  • 4 eggs
  • 1 1/2 C veg. oil
  • 1 (8oz) pkg. cream cheese, softened
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 2 Tbsp applesauce
  • 1 C chopped nuts (optional)
  • small can crushed pineapple, drained (optional)
  • Cream cheese Frosting
  • 1/4 C butter or margarine, softened
  • 1 (8 oz) pkg cream cheese, softened
  • 1 (1 lb) pkg powdered sugar
  • 2 Tbsp milk
  • 1 tsp vanilla
Instructions
  1. Beat carrots, sugar, flour, eggs, veg oil, and softened cream cheese together.
  2. Add baking soda, salt, cinnamon, vanilla, applesauce and (optional) chopped nuts.
  3. For an even more moist cake, add one small can of drained crushed pineapple.
  4. Bake in a 9X13 greased and floured pan @ 350 for 55 minutes, or until clean toothpick.
  5. For the frosting:
  6. Cream butter and cream cheese together.
  7. Add powdered sugar, milk, and vanilla and beat until smooth.
  8. Spread on COOLED cake.

Shamrock Cookies

Last week I posted St. Patrick’s Day Sandwich Cookies. This week how about another version? Shamrock Cookies.

I found shamrock cookie cutters at Michaels for $1.  Yep, $1.  So I created these, very similar to last week’s sandwich cookies, minus the filling. 4 ingredients.  You can’t go wrong.  When I asked my youngest if  chocolate chip cookies were his favorite, he told me “No the St. Patrick’s Day ones.”  Woohooo!
For this version, I rolled a ball of cookie dough and flattened it a little bit.  I then used the cookie cutter and cut out the shamrock. After a little trial and error, this is what worked best for me.  Originally I tried to roll out the entire dough into one big sheet instead of individually, but sadly that didn’t work.


After cutting out the shapes, I placed them on the cookie sheet and baked them like normal.

Super simple shamrock cookies from a cake mix. Perfect for St. Patrick’s Day!
Ingredients
  • 1 package of white or yellow cake mix
  • 2 eggs
  • 3/4 cup of shortening
  • green food coloring
Instructions
  1. Mix cookie ingredients together. Add green food coloring to your liking.
  2. Roll into balls. Flatten and cut out with shamrock cookie cutter.
  3. Place on ungreased cookie sheet.
  4. Bake at 350 degrees for 8-10 minutes. Don’t over bake.
  5. Immediately transfer to a cooling rack.
